I have made two trips to Hartselle and the chicken is unbelievably delicious - it satisfies the craving I have had since I ate some of my grandmother's chicken as a little girl. The post referenced an article that Mr. Ritch sent that stated "properly toned flesh is more moist and tasty". So maybe properly toned is the key to creating the perfect balance between fat and muscle that GPF gives us. <br /><br />The "buyer's club" sounds great! It is worth drivin...This is the only chicken I eat! It is worth driving to Hartselle from Birmingham for these delicious chickens! All other chicken has no flavor to me anymore. I stock up during chicken "season" and use them throughout the year. I place my thawed chicken in the crockpot for 8 hours on low, pull all the meat, return the bones/skin to the crockpot and cook for another 6 on low. Now I have white and dark meat as well as homemade broth! That's exactly how we came to be getting chicken, beef, and lamb from Mr. Ritch every year! I like how they also provide their customers with information and other resources, like recipes and cooking tips. Did you know that when you bake a GPF chicken Mr. Ritch recommends putting it breast side down in the pan? He also says you can put a FROZEN bird in a baking pan with a lid or Reynolds cooking bag, put it in the oven right after breakfast, turn the heat to 200 degrees, and leave it till dinnertime--it will be perfectly cooked and ready to enjoy! I co-ordinate a "buyer's club" that delivers chickens & meats to members in Bham. But the Pasture Raised meats are not more tender than conventional feed-lot meats - just the opposite. Pastured meats require a more 'slow and moist' cooking process - which will yield a more delicious and nutritious meat. There are extensive recommendations for cooking pastured meats online and from Goose Pond (or me). And yes, it's the way our great-grand mothers cooked.<br /> A comparison I make is between white bread and whole-grain - if 'tender' is your priority for your bread, then you're probably happy eating white bread. But if taste, or texture or nutrition are your priorities - you're probably not still eating white bread. As tender goes, you can't beat a CAFO chicken (confined animal feeding operation - i.e. Tyson, Gold, Kist, etc.) Those birds can't hardly move and are practically force fed (apetitie stimulants, growth hormones) - makes for a really tender chicken that's full of fat (i.e. moist). But 'pastured' chickens are out working for a living, getting a varied diet and lots of sunshine and fresh air.
