Southwestern Quesadilla

Mexican tends to  be my go-to if I have a lot of leftovers or not a lot of time. I blame it on my Jasper roots. 

Feel free to use any cooked chicken that you like. If you work, and understand the value of a crockpot, (or don't work, but still understand the value of a crockpot) you should definitely make my Fiesta Chicken recipe ahead of time! 

Southwestern Quesadilla
Prep Time: 20 minutes
Cook Time: 5-7 minutes
Ingredients (2 quesadillas)
  • 1 pound chicken (cooked and chopped or shredded)
  • 2 low carb tortilla (Ole brand)
  • 1 cup Pepper Jack cheese
  • 1/2 cup corn
  • 1/4 cup onions, diced
Optional toppings
  • salsa
  • light sour cream
  • avocado
1. Spray a medium skillet with nonstick cooking spray.
2. Over medium heat, saute onions and corn together for about 2 minutes. Remove from heat.
3. In the same skillet, cook 1 side of 1 tortilla until golden (about 2 minutes).
3. Flip to the other side and fill with Crock Pot Fiesta Chicken* or any grilled chicken and 1/2 cup cheese.
4. Allow cheese to melt, add 1/2 of the corn and onions.
5. Fold in half and press quesadilla until bottom side is golden and cheese is completely melted (2 more minutes).
6. Repeat with remaining ingredients for quesadilla number dos (2).
