RD Eats: Summer Favorites

Summer tomatoes are one of my top favorite foods. Which explains why I started and ended the day with them. Something I didn't realize until typing it just now--- Caprese seemed to be the theme for the day. Maybe I should go to Italy. Yes, yes, I should.

Post Gym breakfast was a whole wheat English muffin with tomato, melted Mozzarella cheese, and basil.

I have a new obsession to share with you. Chia water. It wasn't long after we first tried the Cherry Chia Juice Virginia brought, that we were both thinking of how to make our own home version. I knew infused water would be the perfect base. I had some local honey left over in a jar so I added strawberry mint infused water and 2 tablespoons of Chia seeds, gave it a shake, and refrigerated it over night. I will admit the texture is strange at first  (and until now, I haven't even been a huge chia fan) but now, I love it! Since first trying my own brew, I have been drinking it daily. It's just so easy and refreshing!

So, why chia? Fiber, protein, and Omega 3 fatty acids (good fats), of course! It helps me stay fuller longer!

My other obsession is watermelon! Oh and goat cheese....Apparently I have many food obsessions. Maybe obsessed is a strong word...either way, you should try this combo!

Don't forget to drizzle on the balsamic vinegar! 

Snack was an apple before leaving work. Then, I rode the ZypBike to Jone's Valley Teaching Farm to get tomatoes from our plot...I may have eaten more than I brought home. 

Virginia gave me leftover zucchini from her family's garden so I used the spiralizer to make zucchini pasta. My friend, Mary Lauren, gave me the spiralizer for my last birthday and I love making fun pastas with it!

I adapted this dinner from the Skinnytaste cookbook (also a last year birthday gift!) and it is one of our summer favorites! If you have a chance to get a copy of her book, you should!

After dinner, we had some oatmeal raisin cookies! A favorite recipe from my BFF's mom (Jan!). I forgot to take a picture because everything happened so fast. One minute they were baking...the next minute, they were gone.
