Dietitian's Dish: Coffee, Mangoes, Pizza

My day started as it usually does, coffee before my workout. Today was YCross with Molly, so I sipped coffee + coconut milk on the way. 


I usually finish a bottle of water during the class because it's h.a.r.d. Back at home, I brewed another cup o' Joe to enjoy while I got ready for work. I'm using coconut milk right now to mix it up! If you know me, then you know that I used to be the Splenda queen! About 2 years ago, I just stopped adding it to my coffee and have never gone back. Not for any politcal, cancer-fighting reason. Merely because I wanted to tone down my sweet tooth and I really don't miss it. Now, Splenda even tastes a little funny to me, but I do sometimes still add it to restaurant coffee or to lemon and water to call it lemonade. All that to say...I had coffee this morning.


Once I was ready to go, I mixed up a mango protein smoothie for the road  sidewalk. 1 cup mango, 1/4 cup water, and 1 scoop vanilla protein powder kept me (somewhat) cool during my walk to work. Not really, it was super hot and my make up melted away. 


Since I live downtown, I did have my skull crushing flashlight. Don't make me spill my smoothie.


I recycled my plastic cup while peacfully walking down the new Rotary Trail-- which may not seem like a big deal to most, but man, has downtown come a long way fast!


And then, there were the views. 



A little drinkable MVI never hurt anyone. My mom got me started on EcoDrink and I really like it! Oh, and summer begins this month- which is shocking since it's already 90 degrees. 


Lunch was a southwest inspired salad with 1/4 cup corn, 1/2 an avocado and a red bell pepper. I used balsamic vinegar + dijon mustard for the dressing.

Followed by a favorite: Brie cheese + strawberries!


For an afternoon snack, I went with a classic hummus and peppers combo.


I needed something to cool me down from my afternoon walk home so I had some frozen mango chunks. I absolutely love them--hence why I had them for breakfast too!


I made some iced coffee via my awesome Ninja Coffee Bar. 


Our garden needed water and I needed tomatoes, so I transferred my coffee to a to-go cup and rode a ZypBike to Jones Valley Teaching Farm where our plot is.


I spilled half of my coffee on the bumpy bike ride and contemplated pouring the other half on the tomato plants to give them a jolt. 


Back at home, I struggled with pizza dough and after pressing extra dough into the accidental holes I created, I did what any self-respecting American would do- poured a glass of two three buck Chuck. 


Finally, dinner with the hubs. Pizza (tomato, basil for me; Pepperoni for him), salad + balsamic vinegar, and wine before almost finishing Downton Abbey!
