At Home Japanese Dinner

Wednesday morning started with Molly per usual. Our trio's down to two for now, but we are hoping to have Kathleen back with us next week. In the meantime we've been working on creative poses.

Breakfast and lunch were pretty typical in my realm so I am just going to skip to dinner because I am pumped to share it!

I got the idea from Skinnytaste and ran with a less complicated version. It was a combined effort  of chopping and cooking but ended in a pretty great Japanese themed dinner!

Recipe over on I did leave off a few ingredients like sesame seeds just to make it easier. Five years ago, JT and I wouldn't have seen ourselves eating this for dinner. Before college, I didn't even like Hibachi type foods (read: I had never really had it) but JT loved it so I gave in and eventually, it became one of my favorites too!

I made a Hibachi Steak House dressing by tweaking an online recipe a bit. The end result was pretty good!

Hibachi Salad Dressing:

  • 1/4 cup olive oil
  • 1/3 cup rice vinegar
  • 2 tablespoons water
  • 2 tablespoons ginger
  • 2 sticks celery
  • 2 tablespoons ketchup
  • 1.5 tablespoons soy sauce
  • 1 teaspoon Splenda (or sugar)
  • 1/2 teaspoon garlic
  • 1/2 teaspoon salt
  • pinch ground black pepper
Directions: Blend all ingredients until combined and smooth.

Soup rounded out the meal. I chopped some mushrooms and added them to Trader Joe's Miso Soup.

Not too bad. Who am I kidding?! I was actually thrilled at how this meal turned out and took leftovers to lunch!
