Super Smoothie

Thursday: 

Of course I had a cup of coffee first thing and then got ready to meet Kathleen and Rainie for a jog.



Could there be a better way to start the day than going on a jog with 2 great friends?  I don't think so!  



The weather was absolutely beautiful and it was actually cool outside!  Today we started our run at Target in Homewood and ran down Lakeshore.  



We ran past a couple of track teams on our jog and they were FAST!  Needless to say, we could not keep up with them but I was proud of our jogging pace and the fact that we were out exercising at 6am!  After the jog, Kathleen had to go back and let the dogs that she is dog sitting for out and I headed to Rainie's loft to shower and get ready for work.  Thanks to Rainie letting me get ready at her place, I was not late for work, but definitely would have been if I had gone all the way back home! 


I whipped up a smoothie to eat after our jog.  It was delicious and I am definitely going to have it again tomorrow! 


Smoothie Recipe: 
  • 1/2 cup of whole milk (I don't typically have whole milk but this was left over from when I baked cookies for Preston's birthday party).
  • 1 container of Dannon Triple Zero strawberry greek yogurt
  • 1 tablespoon of Flax Seed
  • 1/2 scoop of vanilla protein powder
  • 1 cup of  Market Pantry frozen strawberry and banana mixture
Nutrition facts:  352 calories, 29 g protein, and 4 g fiber
 *You should probably add a little more milk because mine was pretty thick and it would not go through a straw, but I didn't want to put too much whole milk in it.  Also with the added milk/water this probably should have been 2 smoothies!




Forgot to mention that I grabbed another cup of coffee at Rainie's house!  

Lunch:  1 large slice of Market Pantry's spinach, tomato, goat cheese pizza + a side salad (spinach, arugula, apple, craisins, almonds and light strawberry vinaigrette dressing.




For dinner, we went to the Fish Market restaurant for Leigh Mullinax's 40th birthday.  Leigh used to work with us.  If you do not know Leigh, you are missing out! 


Kathleen opted for the Salmon salad with a potato. 


I got the fish tacos. 


My fish tacos were delicious!  They came with a side of salsa, slaw, and feta cheese.  I also had a side salad. 


Since we were celebrating a birthday, we had to have cake for dessert!



Friday: 

Breakfast was another smoothie using the same mixture as yesterday because I liked it so much!  Of course I had my coffee too! 



Two of my wonderful co-workers and friends (Kelli and Stephanie) and I went to Fort Payne for work today so we stopped by a local spot that Kelli researched and found.  I am so thankful for these two!  


It was called Vintage 1889 and it was an old, historic building with an antique shop and a cute little restaurant.  I ordered the "grown up grilled cheese" and a side salad and I completely forgot to take a picture of it!  The grown up grilled cheese was made of sharp cheddar, gruyere and swiss chees with grilled onions and sandwich sauce on wheat berry bread.  It was so rich and cheesy that I couldn't quite finish it but I enjoyed every bite that I took. 



My parents came to town this weekend so we could celebrate my mom's 59th birthday.  I met Mom and Dad at Slice and we ordered the "basic pesto" pizza (Italian sausage, roasted red pepper, goat cheese and red onion) and the "old school" pizza (pepperoni, Italian sausage mushrooms, and grilled red onion).  




Both pizzas were cooked to perfection but if I had to pick my favorite, I would pick the "basic pesto".  Pizza always goes well with a craft beer.  I had a beer from the Yellowhammer Brewing Company based out of Huntsville, Alabama.  I can't remember the exact name of the beer that I had but it was a very light tasting craft beer which is exactly what I like. 


It tasted kinda like a blue moon with the Orange on it but it was a little lighter tasting than s blue moon.  

After dinner I went home and went to bed because I got up Saturday morning to run the Monkey See Monkey Run 5K benefiting Camp Smile A Mile.  Kathleen and my mom ran the race too!
