National Coffee Day!

What did I (Virginia) kick the day off with?  A cup of coffee of course!  You will never guess what today was?  NATIONAL COFFEE DAY!  I will talk more about this later.  I had to eat something quick on the way to the gym because Molly’s morning strength class definitely requires lots of energy so I ate a Kashi Dark Chocolate Coconut bar on my way to the gym.

The Be Well girls met up for a 5:40 am workout with Molly!  Rainie said it right when she called it “torture Tuesday”!  Molly, if you are reading this, we LOVE your class and that is why we keep coming back every week!  Because the workout changes each week, you never get a used to it so it is always a challenge!  Today we did a tabata workout.  Not familiar with what Tabata is?  I wasn’t either, but now I know that it is interval training using 20 second bursts of high intensity exercises followed by a 10 second break.  Tabata was a great workout!  Since it is National Coffee Day, I just had to grab a cup of the free coffee offered on the way out of the gym.

I definitely had to have a mid-morning snack today.  By 9:30 am my stomach was growling, but I guess it had been about 4 hours since I had my little Kashi bar for breakfast! Snack = Dannon Light and Fit Greek Yogurt with ¼ cup of Kellog’s Granola

Lunch today was a salad.  Today my salad was made up of butter lettuce, a pear, almonds, craisins, goat cheese, and Ken’s Light Strawberry vinaigrette salad dressing.  I brought carrots and hummus from home too.  This just wasn’t quite enough so I picked up some baked chips from the cafeteria to supplement my lunch from home.

Since it is National Coffee Day, the Be Well girls just HAD to take a coffee break!  We stopped by Starbucks and I could not resist the Salted Caramel Mocha.  I love the seasonal flavors at Starbucks!  I did lighten it up a little by having it made with skim milk, no whipped cream, and sugar free mocha syrup.  Rainie had a blonde roast with pumpkin spice added and Kathleen had a Blonde Roast with a shot of sugar free vanilla flavoring.  These are all great ways to get delicious, flavorful coffee without all of the added calories!  If you read our blog on a regular basis, you know that the Be Well girls love coffee!

I normally only have 1 cup of coffee each morning and will occasionally have another cup after a morning run or when I leave the gym.  Today I had 3 cups which is more than I ever drink in a day, but what better day to go overboard on the coffee than National Coffee Day!  As a dietitian, I just have to say that coffee (like most things) is fine in moderation.  Coffee would not be a good drink to choose for hydration because of all of the caffeine in it.  As you know, I do love the flavor of coffee first thing in the morning and it does give me a little burst of energy, but try not to rely on caffeine/coffee for your energy.  Sleep and a well balanced diet are the best sources of energy!

This weekend, my friend Emily and I cooked a delicious meal to eat while watching the Auburn vs. Mississippi State football game Saturday night.  I still had some leftovers and I had to eat them tonight before they went bad.  I just cannot let delicious food spoil!  Emily cooked a pork roast in the crock pot and I made my grandfather’s homemade BBQ sauce for it.  I also made my mom’s sweet and sour green bean crock pot recipe.  Last but not least, we made some rosemary potatoes with a blend of red and sweet potatoes.
Now off to bed so I can wake up in the morning and go to Molly's y-cross class at 5:40 in the morning...or as Rainie called it earlier "why do we do it Wednesdays"!
