Pilates and Pasta

It's Thursday before a holiday weekend, we are almost there!  I am particularly excited about this weekend because a group of us are leaving for the beach tomorrow after work!  Friday afternoon at 5 cannot get here fast enough! 

This morning Kathleen, Rainie and I (Virginia) started off the day with a 6am pilates class.  We used yoga balls and resistance rings.  It was good, we did alot of abdominal exercises, but being in a workout class at 6am with the lights out may not be the best idea for me because I already have trouble waking up in the morning to work out so being in a dark room with relaxing music kinda makes me want to curl up and go back to sleep!  Pilates may work better for me later in the day!  


I had my daily coffee on the way to the gym this morning and then had to have another cup on the way out of the gym.  Some days you just need a little extra boost and today was one of those days!  I had a Kind Bar in the car on my drive to work.  This is a new Kind Bar and I really like it!  It is salted caramel flavored but the flavor is not so strong that it is overwhelming.  It was a pleasant surprise when I got a bite with a white chocolate chunk in it!  I would recommend trying this Kind Bar.  


Mid-morning snack was another Kind Bar.


Today, I was pretty excited about my lunch because I had leftover Chicken Fettuccini Alfredo (recipe from the Skinnytaste cookbook - blog = www.skinnytaste.com ).  I love the recipes on this blog.  Every recipe that I have used from skinnytaste has been delicious.  If you are not familiar with Gina's Skinnytaste, you should check out her blog for a lighter version of your favorite recipes!  



With my leftover pasta, I had low fat greek yogurt and a peach (only 1 peach).  


I also had leftover "kitchen sink" cookies from when I cooked for guests last night so I had to eat one of these for dessert!  


The reason that I had leftovers is because I cooked dinner for my friends Jeanna and Ashley last night.  I work with Jeanna and Ashley and they are such great friends!  We used to do weekly dinners and rotated cooking each week.  There has been so much going on lately that we havn't done our dinners in about 3 months and I have missed it so much!  I am so glad that I was able to kick off our dinners again with a delcious Skinnytaste recipe!
   
Dinner tonight was on the go because I have lots of packing to do.  I have to have my car packed tonight because I am meeting my favorite running buddies in the morning at 6am for a run!  I grabbed the Berry Good Salad from Urban Cookhouse!  It has blackberries, strawberries, tomatoes, spiced pecans, feta, grilled chicken and lemon vinaigrette dressing.  


That pretty much wraps up the day!  Now I'm going to listen to a blog webinar by Helene In Between while I finish packing.
