No lettuce...no problem!


I don't know about you, but by the end of the week, I have typically
put a pretty good dent  in the groceries that I bought at the beginning
of the week and I have to start being creative to use the ingredients
that I have on hand.  Last night, I had to get my food ready for today
because Kathleen, Rainie and I had plans to run this morning.  I
struggle to get to morning workouts on time as it is so adding in
packing a lunch and figuring out something to eat for breakfast just
isn't going to happen if I have to be somewhere by 5:30/6am.

I always have peanut butter, oats, honey, raisins/dates, and almonds
on hand so last night I made 5 ingredient homemade granola bars
(recipe from the minimalist baker).  I had 1 small bar before our run
this morning at about 5am and another  one on the way to work at about
8am.  I brought the rest of the bars to share with Kathleen and Rainie
after our run.



We ran our normal 4 mile loop downtown this morning and I was SO
thankful that the rain held off for us so we could run!  I love
running/working out downtown because we get to drink coffee, watch the Today Show and chat while we get ready for work at Rainie's downtown
loft!  On our run today, we discussed possibly starting to train for a
full Marathon in late February of 2016 so stay posted to hear more
about that!


For lunch, I made a "salad".  I still have a few tomatoes, bell peppers, and cucumbers from my trip to Pepper Place last Saturday and I
HAVE to eat them before they go bad.  I do not have any lettuce so I
decided to make a vegetable salad out of tomato, cucumber, bell
pepper, and carrots.  I also added almonds, feta cheese and Ken's
light Balsamic Vinaigrette dressing.  It was delish and very filling!


I had dinner with my friend Sophie who I used to work with.  I think that I have said this before, but one of the
best parts of eating is the social, relational aspect of food because
who doesn't like to eat and catch up!  Sophie is such s precious person, I miss her!  Sophie and I went to Ashkry Macs
