Happy Tuesday!

{Virginia} Yesterday, I had breakfast and coffee on the go because that's what I have to do when I am running late for a 5:40 am workout class.  I grabbed some almonds (lightly salted) and craisins to eat on the way to the gym.  


This week I have not been putting Splenda in my coffee, just a little hazelnut creamer and I really have not missed the Splenda.  

Kathleen, Rainie, and I started today with a strength group exercise class at 5:40...well I actually started at 5:47 because I was running a little late.  I know I have said this before, but exercise is so much more fun with friends even when it is early in the morning before work.  Thank you Kathleen for being such a good friend and always setting up benches for Rainie and me!  The man in class who told you that you should start charging a fee for setting us up for class is probably right!  It is so nice that they have a little coffee bar at the YMCA so I grabbed a cup of coffee to drink on my way to work.   

When I workout in the morning a mid morning snack is a must!  Today I had the rest of my almonds and craisins for a snack (had some leftover from breakfast).  

For lunch, I made a salad out of the leftover ingredients that I bought to make veggie quesadillas.  My salad was made up of tomatoes, sautéed red onion, jalapeño, mushrooms, mozzarella cheese, feta cheese, avocado, lemon juice, red wine vinegar and olive oil.  "Dessert" was fresh  cherries (not pictured).  



After work I went to see my friend Angie  and her beautiful 3 month old baby boy, Barnes.  He really is the cutest and was giving me so many precious smiles. (Wish I had taken a picture!).  Angie is that friend that I can just chat with for hours and then wonder how the time went by so fast!  Having a friend like Angie is such a blessing!  

Veggie quesadilla was in the menu tonight at my house!   My veggie quesadilla had tomato, sautéed red onion, jalapeños, avocado, feta cheese and mozzarella cheese.  





I found these tortilla shells that have 60 calories, 2g fat, 13g carbohydrate, 7g fiber and 5g protein and they taste great!  




Drinks/Hydration:  
128 ounces of water
20 oz coffee
1 diet coke

Tuesday, I incorporated quite a few heart healthy fat sources (avocado, almonds, and olive oil). Although these are healthy fats, they are still fat which is the most calorically dense macronutrient. Heart healthy fats are an important part of a balanced diet but always remember portion control.
