Last Sunday, after a 4 mile run, I whipped up some protein packed pancakes and sat down to read about T-Swift. I used to try to not like her (after her second album wasn't my style) but the girl just proves over and over again that she is an awesome person! So, I gave in. I'm a fan! Love you, T-Swift! Anyway, JT and I were planning to go on a hike later so I knew I would need a lasting meal. These pancakes did not disappoint!
Yield: 6 pancakes
1/4 cup oat bran
1/4 cup plain Greek yogurt (or light sour cream or light cottage cheese)
1/2 scoop vanilla protein powder
1. Mix all ingredients and blend until well combined (I used a Ninja).
2. Spoon batter onto skillet and cook about 2 minutes or until you begin to see bubbles. Flip and cook other side about 2 minutes or until golden.
3. Top with maple syrup or honey and enjoy!
