Some Benefits of the Cucumber

I put cucumber in my protein shake yesterday morning. I wasn't sure how this would go, but I had two cucumbers that were getting close to the expiration point and I hate wasting good veggies so I tossed one into my chocolate protein powder, banana smoothie. I didn't think it would be very good but I already decided I was going to choke it down anyway. It ended up being delish!
Then, to use the other lonely cucumber in my fridge, I cut it up and put it in my water at work. Now, I might be addicted. I drank 64 ounces of water before lunch. Check out a few benefits of cucumbers below!
  • Cucumbers contain polyphenols that can reduce the risk of developing certain cancers. 
  •  Great antioxidant source! Contains vitamin C and beta carotene to help fight aging and disease. 
  •  Other vitamins and minerals including vitamin K, B1 and potassium. 
  •  Contains fiber (especially the peel) to help keep you full!
  •  It's refreshing! Add it to water to keep it interesting and you just might drink more. 
What can you add them to? Salads, sandwiches, water, smoothies, and more! Or just cut them up and add red wine vinegar, sea salt and pepper for my family's all time favorite snack!
