Perfect {Low Cal} Strawberry Daiquiri


 There you are; a sleek, black bikini, fashionable hat, painted red toes, and over-sized shades that boast a reflection of your pink frozen cocktail and the crystal blue pool. If you're like me, you love the idea of sipping a frozen cocktail poolside, but hate the way it makes you feel... bloated and guilty. This Strawberry Daiquiri recipe is not only light but it's also simple! And since it contains about 1 cup of whole strawberries per serving it may even be...dare I say it... healthy!


{minus the alcohol and all, but hey, worth a shot!} 

Ingredients: yields 4 drinks
  • 1 lb bag of frozen strawberries (no sugar added)
  • 6 ounces of rum or vodka
  • 1 cup ice cubes
  • squeeze of lime
  • 2 large packets of Crystal Light Strawberry (1 packet makes 2 quarts)
  • 1/2 cup to 1 cup water depending on desired consistency
Directions:
1. In a large blender, pulse all ingredients until all ice and strawberries are well blended then blend until the drink reaches desired consistency.
2. Enjoy... poolside, of course!
