Pumpkin Pie Oatmeal

I forget how much I love pumpkin until I break open the first can of the season. Then, it all comes back to me. In this recipe, Greek yogurt provides protein, pumpkin offers vitamins and minerals, and oatmeal gives us whole grains for a match made in heaven. Fall in love with pumpkin this season and give your body vitamin C (for good immunity) and vitamin A (for eyesight)!


  • 1/2 cup Old Fashioned Oats, cooked in water
  • 1/4 cup canned pumpkin
  • 2 Tablespoons Greek yogurt
  • 2 packets of Sweetener (I used Splenda)
  • dash of cinnamon, or pumpkin pie spice, for the top
  1. Cook oatmeal in water per directions on container or about 1.5 minutes in the microwave
  2. Stir in pumpkin, yogurt, sweetener, mix well
  3. Sprinkle cinnamon or spice on top and enjoy!
